Hearty and freezer-friendly breakfast sandwiches packed with eggs, cheddar cheese, and your choice of breakfast sausage or ham, perfect for a time-saving, protein-rich start to your day.

  • Total Time: 30 minutes
  • Yield: 6 sandwiches

Ingredients

Egg Mixture

  • 6 large eggs
  • Salt & pepper, to taste

Sandwich Components

  • 6 English muffins
  • 6 slices cheddar cheese
  • 6 breakfast sausage patties or ham slices
  • 1 tbsp butter (for greasing the pan)

Instructions

  1. Preheat and Prepare: Preheat your oven to 375 °F (190 °C). Grease a muffin tin or a small baking pan with butter to prevent sticking.
  2. Cook the Eggs: Whisk the 6 large eggs together with salt and pepper. Pour the mixture into the greased pan and bake for 12–15 minutes, or until the eggs are fully set and cooked through.
  3. Assemble the Sandwiches: Split the English muffins in half. On each bottom half, layer with a portion of the baked egg, a breakfast sausage patty or ham slice, and a slice of cheddar cheese.
  4. Store the Sandwiches: Wrap each assembled sandwich in foil or parchment paper. Refrigerate for immediate use or freeze for longer storage.

Notes

  • Reheat frozen sandwiches in the microwave for 1–2 minutes or in the oven at 350 °F for 15 minutes until warmed through.
  • For a lighter option, substitute breakfast sausage with turkey bacon or add spinach to the sandwich.
