Ingredients

Bratwurst and Bacon:

  • 34 bratwurst sausages, sliced or crumbled
  • 4 strips bacon, chopped

Scrambled Eggs:

  • 4 large eggs
  • ½ cup shredded cheddar cheese

Potatoes and Veggies:

  • 2 cups diced potatoes (fresh or frozen hash browns)
  • ½ small onion, diced
  • ½ bell pepper, diced (optional)
  • 1 tbsp butter or oil

Additional:

  • Salt and black pepper, to taste
  • Fresh parsley or chives, for garnish

Instructions

  1. Cook the Bacon & Brats: Heat a large skillet over medium heat. Add bacon and cook until crisp. Remove and set aside. In the same pan, add bratwurst slices; cook until browned and heated through.
  2. Add Potatoes & Veggies: Add butter, onions, and potatoes to the skillet. Sauté 8–10 minutes until golden and tender. Stir in bell peppers if using.
  3. Scramble the Eggs: Push the potato mixture to one side. Crack eggs into the other side of the pan and scramble until cooked through.
  4. Combine Everything: Stir together brats, bacon, potatoes, and eggs. Sprinkle with cheese and let it melt slightly.
  5. Serve: Garnish with parsley or chives and serve hot — perfect with toast or a side of fruit!

Notes

  • Substitute bratwurst with breakfast sausage or chorizo for variety.
  • Add a drizzle of hot sauce or ketchup for extra kick.
