Ingredients
Bratwurst and Bacon:
- 3–4 bratwurst sausages, sliced or crumbled
- 4 strips bacon, chopped
Scrambled Eggs:
- 4 large eggs
- ½ cup shredded cheddar cheese
Potatoes and Veggies:
- 2 cups diced potatoes (fresh or frozen hash browns)
- ½ small onion, diced
- ½ bell pepper, diced (optional)
- 1 tbsp butter or oil
Additional:
- Salt and black pepper, to taste
- Fresh parsley or chives, for garnish
Instructions
- Cook the Bacon & Brats: Heat a large skillet over medium heat. Add bacon and cook until crisp. Remove and set aside. In the same pan, add bratwurst slices; cook until browned and heated through.
- Add Potatoes & Veggies: Add butter, onions, and potatoes to the skillet. Sauté 8–10 minutes until golden and tender. Stir in bell peppers if using.
- Scramble the Eggs: Push the potato mixture to one side. Crack eggs into the other side of the pan and scramble until cooked through.
- Combine Everything: Stir together brats, bacon, potatoes, and eggs. Sprinkle with cheese and let it melt slightly.
- Serve: Garnish with parsley or chives and serve hot — perfect with toast or a side of fruit!
Notes
- Substitute bratwurst with breakfast sausage or chorizo for variety.
- Add a drizzle of hot sauce or ketchup for extra kick.
- Works great as a breakfast burrito filling!
