Ingredients

Bratwurst and Bacon:

  • 34 bratwurst sausages (sliced or removed from casings)
  • 4 slices bacon, chopped

Eggs and Potatoes:

  • 4 large eggs
  • 2 cups diced potatoes or frozen hash browns
  • 1/2 cup shredded cheddar cheese
  • 1/2 small onion, diced
  • 1/2 bell pepper, diced (optional)
  • 1 tbsp butter or oil
  • Salt and pepper, to taste
  • Fresh chives or parsley, for garnish

Instructions

  1. Cook the Bacon and Brats: Heat a large skillet over medium heat. Add bacon and cook until crisp. Remove and set aside. In the same pan, cook bratwurst until browned and cooked through.
  2. Add Potatoes and Veggies: Add butter to the skillet, then toss in diced potatoes and onion. Cook for 8–10 minutes, stirring occasionally, until golden and crisp. Add bell pepper if using.
  3. Scramble the Eggs: Push the potato mixture to one side. Crack the eggs into the empty space and scramble until set.
  4. Combine and Finish: Stir everything together — brats, bacon, potatoes, and eggs. Sprinkle with cheese and cover for 1 minute until melted.
  5. Serve: Garnish with chives or parsley. Serve hot with toast, fruit, or coffee!

Notes

  • Substitute bratwurst with breakfast sausage or chorizo for extra spice.
