Ingredients
Bratwurst and Bacon:
- 3–4 bratwurst sausages (sliced or removed from casings)
- 4 slices bacon, chopped
Eggs and Potatoes:
- 4 large eggs
- 2 cups diced potatoes or frozen hash browns
- 1/2 cup shredded cheddar cheese
- 1/2 small onion, diced
- 1/2 bell pepper, diced (optional)
- 1 tbsp butter or oil
- Salt and pepper, to taste
- Fresh chives or parsley, for garnish
Instructions
- Cook the Bacon and Brats: Heat a large skillet over medium heat. Add bacon and cook until crisp. Remove and set aside. In the same pan, cook bratwurst until browned and cooked through.
- Add Potatoes and Veggies: Add butter to the skillet, then toss in diced potatoes and onion. Cook for 8–10 minutes, stirring occasionally, until golden and crisp. Add bell pepper if using.
- Scramble the Eggs: Push the potato mixture to one side. Crack the eggs into the empty space and scramble until set.
- Combine and Finish: Stir everything together — brats, bacon, potatoes, and eggs. Sprinkle with cheese and cover for 1 minute until melted.
- Serve: Garnish with chives or parsley. Serve hot with toast, fruit, or coffee!
Notes
- Substitute bratwurst with breakfast sausage or chorizo for extra spice.
- Add hot sauce, ketchup, or a drizzle of maple syrup for a sweet-and-savory twist.
