Ingredients
Protein
- 4 boneless, skinless chicken breasts, cubed
Vegetables & Aromatics
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
Spices & Seasonings
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1 tablespoon lime juice
Canned & Liquid Ingredients
- 1 (14 oz) can diced tomatoes
- 1 cup coconut milk
Garnish
- Fresh cilantro for garnish
Instructions
- Heat the oil: Heat 2 tablespoons of olive oil in a large skillet over medium heat to prepare for cooking the chicken and aromatics.
- Brown the chicken: Season the cubed chicken breasts with salt and pepper then add to the skillet. Cook until the chicken pieces are lightly browned on all sides, which helps lock in flavor.
- Sauté vegetables: Add the diced onion and sliced red bell pepper to the skillet. Sauté until they are soft and fragrant, about 3-5 minutes, stirring occasionally to avoid burning.
- Add spices and garlic: Stir in the minced garlic, paprika, and cumin, cooking for about 1 minute to release their aromas and deepen the sauce’s flavor.
- Simmer tomatoes: Pour in the diced tomatoes with their juices. Bring to a gentle simmer and cook for 5 minutes to reduce slightly and concentrate flavor.
- Incorporate coconut milk: Stir in the coconut milk and reduce heat slightly. Let the mixture simmer gently for 10 to 15 minutes, or until the chicken is fully cooked and the sauce has thickened nicely.
- Finish with lime and season: Add 1 tablespoon of lime juice for a bright contrast and adjust salt and pepper to taste to balance the flavors.
- Garnish and serve: Garnish with fresh cilantro and serve the creamy Brazilian chicken hot over steamed white rice for a complete meal.
Notes
- For a spicy kick, add a pinch of red pepper flakes when adding the spices.
- This dish pairs beautifully with white rice and fresh lime wedges for added zest.
- Use full-fat coconut milk for a richer, creamier sauce.
- Chicken thighs may be substituted for breasts if preferred for juicier texture.
