- Mix Dry Ingredients: In a mixing bowl, combine the rolled oats, dried blueberries, and a pinch of salt, ensuring the ingredients are evenly distributed.
- Add Wet Ingredients: Stir in the honey (or maple syrup), melted coconut oil, Greek yogurt, and vanilla extract into the dry mixture, mixing well until all ingredients are evenly coated and form a sticky mixture.
- Press and Bake: Firmly press the mixture into the lined baking pan to create an even layer. Bake in the preheated oven for 20–25 minutes or until the edges turn golden brown.
- Cool and Slice: Remove from the oven and allow the granola bars to cool completely in the pan before slicing into 8 bars to ensure they hold their shape.
