Instructions
- Mix spices: In a small bowl, thoroughly combine paprika, garlic powder, onion powder, cayenne pepper, thyme, salt, and black pepper to create the blackening spice blend.
- Prepare chicken: Brush each chicken breast evenly with olive oil to help the spices adhere and promote browning.
- Season chicken: Rub the spice mix evenly on both sides of each chicken breast to ensure full coverage and flavor.
- Heat skillet: Preheat a heavy skillet over medium-high heat until very hot to achieve a good sear.
- Sear chicken: Place the chicken breasts in the hot skillet and cook for 4 to 5 minutes on each side, until a dark crust forms and the internal temperature reaches 165°F (74°C).
- Rest chicken: Remove the chicken from the skillet and let it rest for 5 minutes to allow the juices to redistribute before slicing and serving.

- Using chicken thighs instead of breasts can yield juicier results due to higher fat content.
