Ingredients

Meat

  • 4 cups beef broth
  • 1 cup shredded smoked cheddar cheese
  • 1 cup milk or cream

Instructions

  1. Brown the beef: In a large pot over medium heat, cook the ground beef until it is fully browned. Drain excess fat and set the beef aside.
  2. Sauté vegetables: In the same pot, heat olive oil and add diced onion, chopped carrot, and minced garlic. Cook until the vegetables become soft and fragrant, about 5 minutes.
  3. Simmer potatoes: Add the diced potatoes, beef broth, salt, and pepper to the pot. Bring to a simmer and cook for 15 to 20 minutes, or until the potatoes are tender.
