Instructions
- Brown the beef: Heat olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat to keep the soup from being greasy.
- Sauté the onion: Add the diced onion to the pot with the browned beef. Cook, stirring occasionally, until the onion becomes soft and translucent, about 5 minutes.
- Add potatoes and broth: Stir in the peeled and diced potatoes, then pour in the beef broth. Mix well to combine all ingredients.
- Simmer the soup: Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for about 20 minutes or until the potatoes are tender when pierced with a fork.
- Add milk and cheese: Lower the heat to medium-low. Stir in the milk or cream and shredded smoked cheddar cheese until the cheese has fully melted into the soup, creating a creamy texture.
- Season and serve: Taste the soup and season with salt and black pepper as desired. Serve the soup hot for a comforting meal.
