Ingredients
Chicken
- 4 chicken breasts or thighs
- 1 cup BBQ sauce
- Salt and pepper to taste
Potatoes
- 3 cups potatoes, cubed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp garlic powder
- Salt and pepper to taste
Topping
- 1 cup shredded cheddar cheese
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the potatoes and chicken.
- Prepare Potatoes: In a bowl, toss the cubed potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated. Spread the seasoned potatoes evenly in a baking dish.
- Bake Potatoes: Place the baking dish with potatoes in the oven and bake for 20 minutes to start softening them.
- Add Chicken and Sauce: Remove the dish from the oven and arrange the chicken breasts or thighs on top of the partially cooked potatoes. Brush the chicken generously with BBQ sauce, then return the dish to the oven.
- Bake Chicken and Potatoes: Continue baking for 25 to 30 minutes, allowing the chicken to cook through and flavors to meld.
- Add Cheese: Sprinkle the shredded cheddar cheese over the chicken and potatoes, then bake for an additional 5 minutes until the cheese melts and becomes bubbly.
- Serve: Remove from the oven and let it rest briefly before serving the hearty BBQ chicken bake.
Notes
- Use sweet potatoes instead of regular potatoes for a sweet twist.
- Add chopped onions or corn to the potatoes for extra flavor and texture.
- Adjust BBQ sauce quantity based on your preferred level of smokiness and sweetness.
- Ensure chicken is cooked to an internal temperature of 165°F (74°C) for safety.
