Chicken and Sauce
- 2 cups cooked chicken chunks
- ¾ cup BBQ sauce
Potatoes and Seasoning
- 3 cups diced potatoes
- 2 tbsp olive oil
- 1 tsp paprika
- Salt & pepper, to taste
Topping
- 1 cup shredded cheddar cheese
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the potatoes and baking the chicken.
- Prepare Potatoes: In a mixing bowl, toss the diced potatoes with olive oil, paprika, salt, and pepper until they are evenly coated with the seasoning.
- Bake Potatoes: Spread the seasoned potatoes on a baking sheet or in a baking dish and bake in the preheated oven for 20 minutes, allowing them to soften and start to crisp.
- Add Chicken and Sauce: Remove the potatoes from the oven and stir in the cooked chicken chunks along with the BBQ sauce, mixing everything to combine well.
- Add Cheese and Finish Baking: Sprinkle the shredded cheddar cheese evenly over the chicken and potato mixture, then return to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
