- 1 cup BBQ sauce
- 1 cup shredded cheddar cheese
Potatoes and Seasoning
- 3 cups potatoes, cubed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the perfect temperature for roasting.
- Prepare Potatoes: Toss the cubed potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
- Bake Potatoes: Spread the seasoned potatoes in a single layer in a baking dish and bake for 20 minutes to start softening and roasting them.
- Add Chicken and Sauce: Arrange the chicken pieces on top of the partially baked potatoes and brush them generously with BBQ sauce to infuse smoky flavor.
- Bake Chicken and Potatoes: Return the dish to the oven and bake for an additional 25 to 30 minutes, or until the chicken is fully cooked and the potatoes are fork-tender.
- Add Cheese: Sprinkle the shredded cheddar cheese evenly over the chicken and potatoes, then bake for 5 more minutes until the cheese is melted and bubbly.
- Serve: Remove from the oven and serve hot, enjoying the combination of smoky BBQ chicken, tender potatoes, and melted cheese.
Notes
- Add corn or onions to the potato mixture before baking for extra flavor and texture.
- Swap regular potatoes with sweet potatoes for a healthier variation with a touch of natural sweetness.
