Instructions
- Preheat oven: Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper to ensure the granola doesn’t stick.
- Mix ingredients: In a large bowl, combine the cooked barley, rolled oats, chopped nuts, melted coconut oil, honey or maple syrup, cinnamon, and salt. Stir well to coat all the grains and nuts evenly.
- Spread mixture: Spread the granola mixture evenly over the prepared baking sheet, creating a uniform layer to ensure even baking.
- Bake granola: Bake in the preheated oven for 35 to 40 minutes, stirring once halfway through to promote even toasting. Bake until the granola turns golden and crisp.
- Add dried fruit and cool: Remove the granola from the oven, stir in the dried fruit thoroughly, and allow the granola to cool completely on the baking sheet. This cooling step lets it crisp up fully before storage.
- Store granola: Once cooled, store the granola in an airtight container to maintain freshness for up to one week.
