This Balsamic Chicken with Tomatoes and Basil is a fresh and flavorful one-pan dinner featuring juicy chicken breasts simmered in a sweet and tangy balsamic glaze. Enhanced with burst cherry tomatoes and fragrant fresh basil, it offers an easy, wholesome meal perfect for busy weeknights.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Sauce & Aromatics

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry or grape tomatoes, halved
  • ½ cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)

Finishing Touch

  • ½ cup fresh basil leaves, chopped

Instructions

  1. Season the Chicken: Pat chicken breasts dry and season both sides evenly with salt and black pepper to enhance flavor.
  2. Heat the Skillet: Warm olive oil in a large skillet over medium heat to prepare for searing the chicken.
  3. Sear the Chicken: Add chicken breasts to the hot skillet, cooking for 5 to 6 minutes per side until golden brown. Then remove from skillet and set aside to rest.
  4. Sauté Garlic: In the same skillet, add minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
  5. Add Tomatoes and Sauce Ingredients: Stir in the halved cherry tomatoes, balsamic vinegar, honey or maple syrup, Italian seasoning, and red pepper flakes if using. Mix well.
  6. Simmer Sauce: Allow the sauce and tomatoes to simmer for 5 to 7 minutes until the sauce thickens slightly and the tomatoes soften.
  7. Return Chicken to Skillet: Place the seared chicken breasts back into the skillet, spoon sauce over the top to coat, and let everything simmer for an additional 3 to 5 minutes, until chicken reaches an internal temperature of 165°F and is cooked through.
  8. Garnish and Serve: Remove from heat and sprinkle chopped fresh basil over the chicken just before serving for a burst of fresh herbal flavor.

Notes

  • Use high-quality balsamic vinegar to ensure the best flavor in the glaze.
  • For a Caprese-style twist, add fresh mozzarella pearls on top before serving.
  • This chicken pairs well served over pasta, rice, mashed potatoes, or with crusty bread to soak up the sauce.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
