Instructions
- Season the Chicken: Pat chicken breasts dry and season both sides evenly with salt and black pepper to enhance flavor.
- Heat the Skillet: Warm olive oil in a large skillet over medium heat to prepare for searing the chicken.
- Sear the Chicken: Add chicken breasts to the hot skillet, cooking for 5 to 6 minutes per side until golden brown. Then remove from skillet and set aside to rest.
- Sauté Garlic: In the same skillet, add minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
- Add Tomatoes and Sauce Ingredients: Stir in the halved cherry tomatoes, balsamic vinegar, honey or maple syrup, Italian seasoning, and red pepper flakes if using. Mix well.
- Simmer Sauce: Allow the sauce and tomatoes to simmer for 5 to 7 minutes until the sauce thickens slightly and the tomatoes soften.
- Return Chicken to Skillet: Place the seared chicken breasts back into the skillet, spoon sauce over the top to coat, and let everything simmer for an additional 3 to 5 minutes, until chicken reaches an internal temperature of 165°F and is cooked through.
- Garnish and Serve: Remove from heat and sprinkle chopped fresh basil over the chicken just before serving for a burst of fresh herbal flavor.
