Ingredients
Main Ingredients
- 2 cups rolled oats
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 1/2 cups milk
- 2 eggs
- 1/4 cup maple syrup or honey
- 2 tbsp melted butter or coconut oil
- 1 tsp vanilla extract
- 1 1/2 cups blueberries (fresh or frozen)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the oatmeal.
- Prepare Baking Dish: Grease an 8×8-inch baking dish thoroughly to prevent sticking and ensure easy removal of the oatmeal.
- Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Stir well to distribute the leavening and spices evenly.
- Whisk Wet Ingredients: In a separate bowl, whisk together the milk, eggs, maple syrup (or honey), melted butter (or coconut oil), and vanilla extract until the mixture is smooth and well combined.
- Combine Wet and Dry: Pour the wet ingredients into the dry oat mixture and stir gently just until fully combined to avoid overmixing.
- Add Blueberries: Carefully fold in the blueberries, distributing them evenly throughout the batter.
- Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it evenly.
- Bake: Bake in the preheated oven for 35–40 minutes, or until the oatmeal is set and the top is lightly golden.
- Cool: Allow the baked oatmeal to cool slightly before serving to set fully and enhance flavors.
