Ingredients
Pancakes:
- 1 cup pancake mix or batter
- 1 egg
- ¾ cup milk
Apple Filling:
- 2 apples, diced
- 2 tbsp butter
- 2 tbsp brown sugar
- 1 tsp cinnamon
Instructions
- Prepare Pancake Batter: In a mixing bowl, combine the pancake mix, egg, and milk and stir until smooth to create the batter.
- Cook Thin Pancakes: Heat a non-stick skillet over medium heat and pour a small amount of batter to form thin pancakes. Cook until bubbles appear on the surface, then flip and cook the other side until golden brown. Repeat until all batter is used.
- Make Apple Filling: In another skillet, melt butter over medium heat. Add the diced apples, brown sugar, and cinnamon. Cook, stirring occasionally, until the apples are soft and caramelized, about 8-10 minutes.
- Assemble Rolls: Spoon a generous amount of the warm apple filling onto each pancake, then carefully roll the pancake up to enclose the filling.
- Serve: Place the rolls on a plate and serve warm. Optionally, top with maple syrup or whipped cream for added indulgence.
Notes
- For thinner and more delicate rolls, substitute the pancakes with crepes.
- Add chopped pecans to the apple filling for a crunchy texture and richer flavor.
