  • Total Time: 40 minutes
  • Yield: 12 muffins

Ingredients

For the Muffins:

1 ½ cups all-purpose flour

½ cup granulated sugar

1 ½ teaspoons baking powder

½ teaspoon ground cinnamon

¼ teaspoon salt

1 large egg

½ cup milk

¼ cup unsalted butter (melted)

1 teaspoon vanilla extract

1 cup chopped apples (about 1 medium apple)

For the Streusel Topping:

½ cup all-purpose flour

¼ cup packed light brown sugar

¼ teaspoon ground cinnamon

¼ cup unsalted butter (cold and cut into small pieces)

Instructions

Preheat the Oven:
Preheat your oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners.

Prepare the Dry Ingredients:
In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.

Prepare the Wet Ingredients:
In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.

Combine Wet and Dry Ingredients:
Pour the wet ingredients into the dry ingredients and stir just until moistened. Do not overmix; a few lumps are fine.

Fold in the Apples:
Gently fold the chopped apples into the muffin batter.

Prepare the Streusel Topping:
In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.

Fill the Muffin Pan:
Divide the muffin batter evenly among the 12 muffin cups, filling them about ¾ full.

Add the Streusel Topping:
Sprinkle a generous amount of streusel topping over each muffin.

Bake the Muffins:
Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.

Cool and Serve:
Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

Apple Tip: Use firm apples like Honeycrisp, Granny Smith, or Fuji for the best results.

Mixing Tip: Do not overmix the batter; overmixing will lead to tough muffins. Stir gently until the ingredients are just combined.

Storage Tip: Muffins stay fresh in an airtight container at room temperature for up to 3 days.

Freezing Tip: To freeze, let the muffins cool completely, then wrap individually and store in a freezer-safe bag for up to 3 months. Reheat in the microwave or oven.
