Instructions
Preheat the Oven:
Preheat your oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners.
Prepare the Dry Ingredients:
In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
Prepare the Wet Ingredients:
In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
Combine Wet and Dry Ingredients:
Pour the wet ingredients into the dry ingredients and stir just until moistened. Do not overmix; a few lumps are fine.
Fold in the Apples:
Gently fold the chopped apples into the muffin batter.
Prepare the Streusel Topping:
In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Fill the Muffin Pan:
Divide the muffin batter evenly among the 12 muffin cups, filling them about ¾ full.
Add the Streusel Topping:
Sprinkle a generous amount of streusel topping over each muffin.
Bake the Muffins:
Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
Cool and Serve:
Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
