Ingredients

1 large eggplant

2 tablespoons avocado oil

2 tablespoons white sugar

2 tablespoons low sodium soy sauce

2 tablespoons minced garlic (about 3 cloves)

1 tablespoon chili oil (optional)

Instructions

Preheat your air fryer to 350°F.

Slice the eggplant into thick rounds, about ½-inch thick. Cut slits into the center of each slice to create an opening for the sauce to soak in.

In a shallow bowl, mix together the avocado oil, white sugar, soy sauce, minced garlic, and chili oil (if using).

Line your air fryer basket or tray with parchment paper for easy cleanup.

Place the eggplant rounds in a single layer in the air fryer basket. Spoon the sauce over the top of each eggplant round.
