Ingredients
1 large eggplant
2 tablespoons avocado oil
2 tablespoons white sugar
2 tablespoons low sodium soy sauce
2 tablespoons minced garlic (about 3 cloves)
1 tablespoon chili oil (optional)
Instructions
Preheat your air fryer to 350°F.
Slice the eggplant into thick rounds, about ½-inch thick. Cut slits into the center of each slice to create an opening for the sauce to soak in.
In a shallow bowl, mix together the avocado oil, white sugar, soy sauce, minced garlic, and chili oil (if using).
Line your air fryer basket or tray with parchment paper for easy cleanup.
Place the eggplant rounds in a single layer in the air fryer basket. Spoon the sauce over the top of each eggplant round.
Air fry the eggplant at 350°F for 15 minutes. For an extra crispy crust, broil the eggplant for an additional 2 minutes.
Serve with steamed white rice or enjoy as a standalone dish.
Notes
The chili oil is optional but adds a nice touch of heat and flavor to the dish.
You can adjust the amount of soy sauce and sugar depending on how sweet or savory you want the sauce.
If you prefer a softer eggplant, you can skip broiling at the end.
